This time, we’re featuring a light roast from Colombia that's all kinds of awesome. This isn't just any coffee; it's from a legendary grower named Felipe, and he's doing some pretty wild things. He takes the coffee cherries, lets them ferment in a sealed tank, and voila—you get this mind-blowing flavor.
What's so cool about this coffee is it smells and tastes like peaches. It dominates the flavor and aroma, thus the name: Peach Monster! This is one monster you'd be willing to hug.
Don't let the word "anaerobic" scare you. All it means is that we’re getting some incredible, juicy flavors out of the bean. We’re tasting peach, pink lemonade, and jasmine in this one. Smell the dry grounds before you brew it - crazy fruity.
